Dominique Portet Blanc de Blancs is made with Chardonnay from a mature, steeply sloping Upper Yarra Valley vineyard. At 250 metres elevation, it is a cool climate site.
The fruit is handpicked when it shows plenty of acidity. The whole bunches are pressed in the traditional Champagne way, a very gentle process that avoids extracting harsh phenolics and ensures the juice retains freshness.
After fermentation in tank, the wine is left on lees for six months. It is then bottled for its secondary ferment and a further three years on lees. Once disgorged, the wine is aged for 12 months to allow the flavours to meld.
Pale straw, Dominique Portet Blanc de Blancs is a crisp sparkling wine with green apple and citrus flavours, bright acidity and length. Cellaring potential is five years.
